Amherstburg's Dalhousie Bistro recently introduced waffles to their menu - and they're creating quite a stir. It's because they use yeast in the batter.

A few weeks ago, two people — Windsor Morning listener Brad Robitaille and my colleague Katera Zappacosta — told me within hours of each other that I had to pay a visit to the Dalhousie Bistro in Amherstburg.

The reason? Their new Belgian-style waffle.

Unlike most North American waffles, which use baking soda or powder as the leavening agent, the Dalhousie Bistro uses yeast. Many foodies claim this process makes for a more flavourful, crispy and fluffy waffle.

I'm not a big waffle eater, but I was intrigued enough that I decided to find out more. Tap on the audio player to hear about my experience.
