Janet Harron, who makes vinegar out of beer, says that she's simply following a long tradition of do-it-yourself fermentation.

"There are recipes from the 15th century that call for an ingredient called alegar, which is, essentially, sour beer," says Harron.

"Any alcoholic product can become vinegar."

Harron makes her Newfoundland Beer Vinegar with St. John's Stout from the Yellowbelly Brewery. Harron's husband, Liam McKenna, is the brewmaster for Yellowbelly, and he provides Harron with discarded beer to turn into vinegar.

Harron said beer vinegar can be used for salad dressings, marinades, seasonings, or even as a refreshing drink when it is diluted with water.
