The menu at El Bosco, a Toronto food truck and catering service, is the kind of amazing mashup that you may not get to enjoy outside of such a diverse city. Founded by Marcela Geer, who hails from Colombia, and Ismael Castro, who's from Mexico, El Bosco's repertoire of dishes merges each owner's favourites from their home countries, with a few vegan additions in the mix as well.
"We use a lot of fresh ingredients," says Castro, who also serves as Executive Chef, says about Latin American food. "There's citrus, there's spiciness, there's smokiness, you know, there's a kaleidoscope of flavours which you can apply in one dish… that's what makes [it] unique."
