Jellied salads were a major fad of the 1960s. Pair that with an effort to bolster the Canadian seafood industry and you’ve got tonight’s star dish: the moulded lobster salad.
From the interesting-looking lobster mould to the taste and texture of the dish, this meal is sure to be memorable.
Ingredients
2 tbsp gelatin powder
1/4 cup cold water
2 cups canned cooked flaked lobster
1 cup green onion, finely sliced
3/4 cup mayonnaise
1/4 cup ketchup
1 tbsp lemon juice
1 tbsp horseradish
1/2 tsp hot sauce
1 tsp salt
1/2 tsp black pepper
Special materials required: Lobster-shaped mould
Preparation
Add gelatin and cold water to a small pot, stir and let sit for 5 minutes. After, heat over medium heat until gelatin is melted. Remove from heat and set aside.
In a large bowl, mix the remaining ingredients together. Pour in melted gelatin and mix.
Pack mixture firmly into lobster mould and set in the refrigerator for at least 1 hour.
To remove, dip mould in warm water for 30 seconds. Flip mould onto a serving plate and tap until lobster comes out.
